The organic sorghum flour product is obtained by milling of sorghum. Sorghum is a crop grain cereal rich in antioxidant good for ageing and lowers cardiovasclar disease. It is also rich in iron contributes to the reduction of tiredness and fatigue. It can be used in mixture with other flours to give perfume and flavor to both sweet and savory leavened dough. It is excellent for preparing bread, biscuits, crepes, wraps, tarts, baked desserts and pancakes.
Recipe for the typical cookies called "Zaleti Veneti" Ingredients for 15 cookies:: 170g of organic yellow corn flour, 30g of organic sorghum flour, 2 whole eggs, 100g of extra virgin olive oil, 100g of raisins, 8g of baking powder, 1/2 squeezed lemon, 1 teaspoon coffee full of beetroot fiber, 1 teaspoon of psyllium fiber. Soften the raisins for 5 minutes in warm water, then squeeze them well. Blend 50g raisins with eggs, lemon juice and oil. Add the yeast to the cornmeal and sorghum. Add the blended mixture and the remaining softened raisins to the mixture. Work the dough well with your hands, until you obtain a compact but workable compound. Make balls, crush them with the palm of your hand and arrange the discs obtained on a baking sheet lined with parchment paper. Bake in a preheated static oven at 180 ° C for 20-25 minutes.
