• Ricotta Salata. Salty sheep ricotta: This cheese is a dried, salty aged sheep’s milk cheese from Saridinia. Ricotta means re- cooked and salata means salted. It is sometimes called ricotta secca or Ricotta Pecorino. The cheese is made from the whey part of the sheep milk. It is made from fresh ricotta that has been pressed, salted and aged for at least 90 days. The result is a firm cheese ideal for grating. Ricotta salata is available in two shapes: wheel and wedge (2,5 kg and 300 gr.). The product has a shelf life of 180 days.
• Hard cheese (similar to parmigiano): pasteurized extra hard cheese, dry, slightly brittle, suitable for grating. The flavor is clearly, sweet, savory and fragrant. The aroma is the typical one of lactic aromas along with vegetable notes. This cheese is available in the following shapes: wheel (23 KG), wedge ( 300 gr.) and 1/16 of wheel (13,5 kg.). The shelf life of this product is 180 days.
• Provolone cheese: is a ripened firm semi hard cheese. The body has a near white or ivory through to light yellow color and a fibrous texture with long stranded parallel-oriented protein fibers. It is suitable for cutting and when aged for grating as well. Gas hole are generally absent, but few openings and splits are acceptable. The cheese is manufactured and sold with or without a rind . This cheese is available in the following shapes: entire ( 5kg.) or wedge (300 gr.). The shelf life of this product is 180 days.
• Mozzarella: it’s a fresh cheese traditionally made from Italian buffalo and later cow’s milk by the pasta filata method. The term is used for several kinds of Italian cheeses that are made using spinning and then cutting (hence the name, as the Italian verb mozzare means “to cut”). This product is available in various shapes. We can also offer you the catering size “mozzarella filone” 1 kg. The product has a shelf life of 30 days.
